I believe it’s easy to eat good, healthy food. My Goal with the recipes I’m sharing is to provide quick, easy and clean meals that can be mixed and matched to create a variety of combinations throughout the week. This helps keep things simple without getting boring which is the key to my existence!
Here is a simple recipe I have for preparing cauliflower rice. I prepare it at the beginning of the week and have a quick side that I can add to any meal like scrambled egg whites for breakfast or oven roasted chicken for dinner.
1 Bag of Cauliflower Rice (This one from Costco is 2lb)
Salt to taste
Heat pan over medium heat for 2 minutes
Add bag of cauliflower rice, seasoning and salt to pan. Stir constantly for around 3-4 minutes until the cauliflower starts to lose its opacity. Don’t wait for all of the cauliflower to get translucent because it will become mushy (technical term.) And voila! You have a healthy/green side to add to any meal for a whole week.
